Denver: Basic Kneads Pizza truck

Our final stop at the Denver Art Walk was the Basic Knead Pizza truck.  The truck is a converted FedEx truck with a wood burning oven.
The truck can make pizzas to order, but unfortunately you can only get a 10″ pie, not by the slice.
We picked up two pies: a Margharita & “the Wise Guy”: Olive oil, Mozzarella, Sausage & Rosemary.

    Hey Michelle, Great to hear you stopped by! I was cooking with our 2nd oven at a private party. Here's why our wood-fired pizza is served by the whole pie (and every other wood-fired joint I've ever been in does the same): 'Cause pie by the slice is an invention that allows pizza joints to cook a huge pie (saves labor) let it sit out on the counter for god knows how long, and the put a slice back in the oven when you order. We want to make a fresh pie for everyone who orders, so your crust is perfectly crunchy on the bottom, chewy in the middle, and and the cheese isn't twice melted (it can get tough the longer it's warmed up or allowed to sit). Love the blog, makes me want to come out to LA soon for a week and just drive around finding food trucks. We've got a long way to go in Denver.

    Thanks Eric for the clarification. The pizzas you make are a bargain for the price, easily enough for 2 people (or 1 really hungry person). If you come out to So Cal, remember that LA is about 1 hour north of Orange County (where most of my pics are from). You'll need a car, a bag of quarters for the meters, and a shopping bag to carry your food. Hope you do come out here, and thanks again for delish pizza!
